We are committed to ecologically friendly farming practices.
In fact, we practice what we call 'Extreme Ecoagriculture'.
Wetlands are some of the planet's most biodiverse ecosystems.
They function as nature's filters, detoxifying and purifying
surface water. We are dedicated to farming in harmony
with our wetlands. While other farms destroy wetlands
to make room for cropland, we take advantage of ours with
a >1:1 wetland to farmland ratio! Some of our crops are
grown next to wetlands while others are grown directly in
the wetlands. Our produce benefits by growing in
this nutrient-rich environment. Needless-to-say,
all of our produce is organic. We never use chemicals to
grow any of our crops.

For
100 years, our family has passed down a delicious
strain of garlic from generation to generation. At Leiber
Farms, we are continuing this family tradition and, for
the first time, making our garlic available to the public.
It is an easy to peel, hardneck garlic. A lot of care goes
into the growing process; we plant and pick each plant by
hand. After tasting our garlic, you will see why so much
effort was spent preserving it.
Over the next few years, we will be expanding our supply
to create commercially viable quanities.

Maple syrup flavor is influenced by region. Most syrup
is produced in Canada and Vermont and has a common taste.
Southeast Wisconsin has relatively few maple syrup producers,
with Leiber Farms being the largest privately
owned maple farm in Racine county. Our maple
syrup has a very sweet flavor that some have compared
to honey and unlike anything you will find at the grocery
store.
It
takes 40 gallons of sap to make 1 gallon of syrup. We
tap our maples with stainless steel spouts. Sap
is collected from each tree by hand. Most syrup
producers boil sap using firewood, giving the syrup a
slightly smokey or 'robust' flavor. At Leiber Farms, we
use a smokeless method to produce syrup. The
end result is simply sweet.
Very few have tried our syrup, as we then turn it into
Pure Maple Sugar! Sugar can be purchased
